Ingredients:

  • 2 tablespoon Butter
  • 6 Eggs
  • 2 tablespoon water
  • 1/4 cup Diced red pepper
  • 1/4 cup Diced green pepper
  • 2 tablespoon Minced green onion
  • 1/2 lb Medium to Large shrimp, raw or cooked
  • 1 1/2 tablespoon Herbs for Seafood
  • Pinch of Salt

Directions:

Preheat oven to 350 degrees. Using butter, coat bottom and sides of 9 inch quiche or pie plate. Whisk eggs and water in a bowl and set aside. In nonstick skillet, saute peppers and onion for about two minutes. Add shrimp, if using raw shrimp, cook two to three minutes more at medium heat until pink. Add vegetable-shrimp mixture to whisked eggs. Add Herbs for Seafood and a pinch of salt. Pour into prepared dish. Bake for 25 to 30 minutes until eggs are just set and frittata is golden brown. Serves six.
