Ingredients:

  • 1 Egg
  • 2 6.5 oz tins of chopped clams or 1 cup cooked, minced clams (reserve 2 tbsp. juic
  • 2 tablespoon milk
  • 1 each Clam Fritter Mix package
  •  Canola Oil

Directions:

In mixing bowl, beat egg, then add reserved clam juice and milk. Add drained clams and Clam Fritter Mix to the liquid mixture, and stir until blended. Divide mixture into four equal portions and shape into cakes. Place in refrigerator for a half hour. Place chilled fritters in hot oil, and carefully flatten to about 1/2 thick. Fry until golden brown on each side. Drain on paper towels. Serve as a sandwich or as a main course, garnished with a salsa-mayonnaise dip. Yields four fritters.
